Siden den første rejse til de thailandske strande, har byen, menneskerne og maden været en evig inspiration for restauratør Kenneth Heske, ejer af thai-kæden Wokshop. I 2000 gjorde han alvor af drengedrømmen, og åbnede sin første restaurant i hovedstadsområdet. Det blev startskuddet på et vaskeægte eventyr, og i dag tæller den thailandske restaurantkæde Wokshop 9 restauranter på Sjælland og Fyn.

Konceptet var dengang som nu; autentisk thaimad tilberedt af thailandske kokke – for danske kokke laver bare ikke lige så god thaimad. For at sikre den helt rigtige smag anvendes der friske råvarer fra både Danmark og Thailand. Faktisk bliver minimum en tredjedel af råvarerne fløjet fra Thailand til restauranterne.

En eksplosion af smage

Det thailandske køkken er kendt for at være en eksplosion af smage. Her finder du smagfulde retter med chili og friske krydderurter. Retterne varierer i styrke, og mens nogle brænder ganske kort og intenst, har andre mere dybde.

Smager du godt efter, vil du ofte opdage, hvordan alle retterne hos Wokshop har en fin balance mellem det sure, det søde, det salte og det bitre. De thailandske kokke er nemlig eksperter i at tilberede retter, hvor alle dine smagsløg aktiveres i en smuk symfoni.

Smag det thailandske køkken

Besøger du Wokshop, behøver du ikke nøjes med én ret. I stedet serveres retterne Thai Style, det vil sige mange retter på samme tid, så hele bordet kan smage lidt af det hele og prøve så meget af menukortet som muligt. Bestiller du en af curry-retterne, får du den derfor heller ikke serveret på én tallerkenen, men i stedet får du risene og karry i hver sin skål, så I let kan dele.

Trænger dine retter til lidt ekstra spice? Kan du pifte dem op med frisk chili og koriander eller måske en smule Prik Nam Pla. Prik Nam Pla er en thaichilipasta, der består af en blanding af chili, hvidløg, rejepasta, lime og andre krydderier. Prik Nam Pla anvendes ofte som basen i mange thailandske retter, men kan også bruges som dip.

Vil du slutte dit besøg af med noget sødt, kan du prøve en af de traditionelle thailandske dessert fra menukortet. Thailandske desserter er kendt for at være søde og fremstilles hovedsagligt af ris, kokosmælk og sukker. Prøv eksempelvis Wokshops lune kokoskager lavet af sticky rice, kokosnød og palmesukker.

Spørger du ejeren Kenneth Heske, hvilken følelse han håber gæsterne går fra Wokshop med, er svaret ganske kort: ”har du nydt maden, stemningen og omgivelserne, så kan jeg ikke drømme om mere”. Den er nemlig den selv samme følelse, som ramte ham efter hans første møde med Thailand og det thailandske folk.

Thailand er og bliver en inspirationskilde for Wokshop, og derfor rejser hele familien flere gange om året til Asien for at møde folket, smage på maden og mærke den ægte thai-stemning. Alt sammen i håb om at kunne tage bare en lille bid af Thailand med tilbage til Danmark og give den videre til de mange gæster, der hver dag besøger Wokshop for at drømme sig væk til hvide sandstrande og palmer.
